Vegan Arugula and Pear Salad Recipe


Ingredients:
For the Salad:
6 cups arugula
2 ripe pears, thinly sliced
1/2 cup walnuts, toasted
1/4 cup red onion, thinly sliced
1/4 cup dried cranberries
1/4 cup vegan goat cheese or vegan feta, crumbled
For the Dressing:
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup or agave nectar
Salt and pepper to taste
Instructions:
In a large bowl, combine arugula, sliced pears, toasted walnuts, red onion, dried cranberries, and vegan goat cheese or vegan feta.
In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup or agave nectar, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently until well coated.
Adjust salt and pepper to taste.

Non-Vegan Alternative:
For a non-vegan version, you can replace vegan goat cheese or vegan feta with traditional goat cheese or feta.
