Vegan Arugula and Pear Salad Recipe

Ingredients:

For the Salad:

  • 6 cups arugula

  • 2 ripe pears, thinly sliced

  • 1/2 cup walnuts, toasted

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup dried cranberries

  • 1/4 cup vegan goat cheese or vegan feta, crumbled

For the Dressing:

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon maple syrup or agave nectar

  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine arugula, sliced pears, toasted walnuts, red onion, dried cranberries, and vegan goat cheese or vegan feta.

  • In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup or agave nectar, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss gently until well coated.

  • Adjust salt and pepper to taste.

  • Serve and enjoy your Vegan Arugula and Pear Salad!

Non-Vegan Alternative:

For a non-vegan version, you can replace vegan goat cheese or vegan feta with traditional goat cheese or feta.
