Vegan Avocado and Cucumber Sandwich Recipe

Ingredients:

  • 8 slices of whole grain bread (ensure it's vegan)

  • 2 ripe avocados, mashed

  • 1 cucumber, thinly sliced

  • 1 cup alfalfa or broccoli sprouts

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Optional: Red pepper flakes for a hint of spice

  • Fresh cilantro or dill for garnish

Instructions:

  • Prepare the Avocado Spread:

    • In a bowl, mash the ripe avocados with lemon juice, salt, and pepper. If desired, add red pepper flakes for a bit of spice.

  • Slice the Cucumber:

    • Thinly slice the cucumber.

  • Toast the Bread:

    • Toast the whole grain bread slices to your liking.

  • Assemble the Sandwich:

    • Spread the mashed avocado mixture generously on one side of each bread slice.

  • Layer the Sandwich:

    • On half of the slices, layer cucumber slices and sprouts. Place the remaining slices on top to form sandwiches.

  • Garnish:

    • Garnish with fresh cilantro or dill for added flavor.

  • Slice and Serve:

    • Use a sharp knife to cut the sandwiches in half diagonally or as desired.

Non-Vegan Alternative:

If you prefer a non-vegan version, you can add a layer of cream cheese or your favorite cheese slices.
