Vegan Avocado and Cucumber Sandwich Recipe


Ingredients:
8 slices of whole grain bread (ensure it's vegan)
2 ripe avocados, mashed
1 cucumber, thinly sliced
1 cup alfalfa or broccoli sprouts
1 tablespoon lemon juice
Salt and pepper to taste
Optional: Red pepper flakes for a hint of spice
Fresh cilantro or dill for garnish
Instructions:
Prepare the Avocado Spread:
In a bowl, mash the ripe avocados with lemon juice, salt, and pepper. If desired, add red pepper flakes for a bit of spice.
Slice the Cucumber:
Thinly slice the cucumber.
Toast the Bread:
Toast the whole grain bread slices to your liking.
Assemble the Sandwich:
Spread the mashed avocado mixture generously on one side of each bread slice.
Layer the Sandwich:
On half of the slices, layer cucumber slices and sprouts. Place the remaining slices on top to form sandwiches.
