Vegan Avocado and Tomato Salad Recipe


Ingredients:
For the Salad:
2 large avocados, diced
2 cups cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
Salt and pepper to taste
For the Dressing:
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and pepper to taste
Instructions:
In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, and lime juice.
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently until well coated.
Adjust salt and pepper to taste.
Serve and enjoy your Vegan Avocado and Tomato Salad!
Non-Vegan Alternative:
For a non-vegan version, you can add crumbled feta cheese to the salad.
