Vegan Avocado and Tomato Salad Recipe

Ingredients:

For the Salad:

  • 2 large avocados, diced

  • 2 cups cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 tablespoon lime juice

  • Salt and pepper to taste

For the Dressing:

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, and lime juice.

  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss gently until well coated.

  • Adjust salt and pepper to taste.

  • Serve and enjoy your Vegan Avocado and Tomato Salad!

Non-Vegan Alternative:

For a non-vegan version, you can add crumbled feta cheese to the salad.
