Vegan Balsamic Roasted Cherry Tomatoes Recipe


Ingredients:
1 pint cherry tomatoes, halved
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions:
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine halved cherry tomatoes with olive oil, balsamic vinegar, minced garlic, dried basil, dried oregano, salt, and pepper. Toss until the tomatoes are evenly coated.
Spread the tomatoes on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes or until the tomatoes are softened and slightly caramelized, stirring once halfway through.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves.
Non-Vegan Alternative:
For a non-vegan version, you can add 1/4 cup of crumbled feta cheese to the tomatoes after roasting. The residual heat will slightly melt the cheese.
