Vegan Balsamic Roasted Cherry Tomatoes Recipe

Ingredients:

  • 1 pint cherry tomatoes, halved

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh basil leaves for garnish

Instructions:

  • Preheat the oven to 375°F (190°C).

  • In a mixing bowl, combine halved cherry tomatoes with olive oil, balsamic vinegar, minced garlic, dried basil, dried oregano, salt, and pepper. Toss until the tomatoes are evenly coated.

  • Spread the tomatoes on a baking sheet lined with parchment paper.

  • Roast in the preheated oven for 20-25 minutes or until the tomatoes are softened and slightly caramelized, stirring once halfway through.

  • Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves.

Non-Vegan Alternative:

For a non-vegan version, you can add 1/4 cup of crumbled feta cheese to the tomatoes after roasting. The residual heat will slightly melt the cheese.
