Vegan Cauliflower Buffalo Bites Recipe

Ingredients:

  • 1 large cauliflower head, cut into florets

  • 1 cup almond flour or all purpose flour

  • 1 cup unsweetened almond milk

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

For the Buffalo Sauce:

  • 1/2 cup hot sauce (ensure it's vegan)

  • 1/4 cup melted vegan butter

  • 1 tablespoon maple syrup

  • 1 teaspoon apple cider vinegar

Instructions:

  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

  • In a large bowl, whisk together almond flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper to create a smooth batter.

  • Dip each cauliflower floret into the batter, making sure to coat it evenly, and place it on the prepared baking sheet.

  • Bake in the preheated oven for 20-25 minutes or until the cauliflower is golden brown and crispy. (You can also deep fry the cauliflower, if you don't have an oven.)

  • While the cauliflower is baking, prepare the buffalo sauce. In a small bowl, whisk together hot sauce, melted vegan butter, maple syrup, and apple cider vinegar.

  • Once the cauliflower is done, transfer it to a large mixing bowl. Pour the buffalo sauce over the cauliflower and toss until all pieces are evenly coated.

  • Return the coated cauliflower to the baking sheet and bake for an additional 10-15 minutes or until the sauce has caramelized.

  • Remove from the oven and let it cool for a few minutes before serving.

Non-Vegan Alternative:

If you prefer a non-vegan version, you can use regular butter instead of vegan butter and your favorite non-vegan hot sauce.
