Vegan Cauliflower Buffalo Bites Recipe


Ingredients:
1 large cauliflower head, cut into florets
1 cup almond flour or all purpose flour
1 cup unsweetened almond milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
For the Buffalo Sauce:
1/2 cup hot sauce (ensure it's vegan)
1/4 cup melted vegan butter
1 tablespoon maple syrup
1 teaspoon apple cider vinegar
Instructions:
Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together almond flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper to create a smooth batter.
Dip each cauliflower floret into the batter, making sure to coat it evenly, and place it on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes or until the cauliflower is golden brown and crispy. (You can also deep fry the cauliflower, if you don't have an oven.)
While the cauliflower is baking, prepare the buffalo sauce. In a small bowl, whisk together hot sauce, melted vegan butter, maple syrup, and apple cider vinegar.
Once the cauliflower is done, transfer it to a large mixing bowl. Pour the buffalo sauce over the cauliflower and toss until all pieces are evenly coated.
Return the coated cauliflower to the baking sheet and bake for an additional 10-15 minutes or until the sauce has caramelized.
Remove from the oven and let it cool for a few minutes before serving.
Non-Vegan Alternative:
If you prefer a non-vegan version, you can use regular butter instead of vegan butter and your favorite non-vegan hot sauce.
