Vegan Cheesy Baked Cauliflower Recipe

Ingredients:

  • 1 large head cauliflower, cut into florets

  • 2 tablespoons olive oil

  • 1 cup nutritional yeast

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss cauliflower florets with olive oil, nutritional yeast, garlic powder, onion powder, dried thyme, smoked paprika, salt, and pepper until the cauliflower is evenly coated.

  • Spread the coated cauliflower on a baking sheet lined with parchment paper.

  • Bake in the preheated oven for 25-30 minutes, tossing halfway through, or until the cauliflower is tender and the edges are golden brown.

  • Remove from the oven and garnish with fresh parsley before serving.

Non-Vegan Alternative:

For a non-vegan version, you can add 1 cup of shredded cheddar or mozzarella cheese to the cauliflower mixture before baking. Ensure the cheese is distributed evenly.
