Vegan Chickpea and Avocado Salad Recipe


Ingredients:
For the Salad:
1 can (15 oz each) chickpeas, drained and rinsed
1 can (15 oz each) red beans, drained and rinsed
1 avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup cucumber, diced
1/4 cup fresh cilantro, chopped
1/4 cup corn kernels (fresh or canned)
1/4 cup lime juice
Salt and pepper to taste
For the Vegan Avocado-Lime Dressing:
1 ripe avocado
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
2 tablespoons olive oil
1 clove garlic, minced
Salt and pepper to taste
For Non-Vegan Option:
Grilled shrimp
Instructions:
In a large bowl, combine chickpeas, diced avocado, cherry tomatoes, red onion, cucumber, fresh cilantro, corn, and lime juice.
In a blender or food processor, combine the ingredients for the Avocado-Lime Dressing. Blend until smooth.
Pour the dressing over the salad and toss gently until well coated. Season with salt and pepper to taste.
For the non-vegan version, add grilled shrimp to the salad.
