Vegan Chickpea and Avocado Salad Recipe

Ingredients:

For the Salad:

  • 1 can (15 oz each) chickpeas, drained and rinsed

  • 1 can (15 oz each) red beans, drained and rinsed

  • 1 avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 1/4 cup cucumber, diced

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup corn kernels (fresh or canned)

  • 1/4 cup lime juice

  • Salt and pepper to taste

For the Vegan Avocado-Lime Dressing:

  • 1 ripe avocado

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup lime juice

  • 2 tablespoons olive oil

  • 1 clove garlic, minced

  • Salt and pepper to taste

For Non-Vegan Option:

  • Grilled shrimp

Instructions:

  • In a large bowl, combine chickpeas, diced avocado, cherry tomatoes, red onion, cucumber, fresh cilantro, corn, and lime juice.

  • In a blender or food processor, combine the ingredients for the Avocado-Lime Dressing. Blend until smooth.

  • Pour the dressing over the salad and toss gently until well coated. Season with salt and pepper to taste.

  • For the non-vegan version, add grilled shrimp to the salad.

  • Serve and enjoy your Vegan Chickpea and Avocado Salad!
