Vegan Classic Caesar Salad Recipe


Ingredients:
For the Salad:
1 head of Romaine lettuce, washed and chopped
1 cup cherry tomatoes, halved
1 cup croutons (check for vegan options or make your own)
1/4 cup vegan Parmesan cheese, grated
For the Caesar Dressing:
1/2 cup raw cashews, soaked in hot water for 1 hour
1/4 cup water
2 tablespoons nutritional yeast
2 tablespoons capers
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 clove garlic, minced
1 teaspoon agave syrup or maple syrup
Salt and pepper to taste
Instructions:
In a blender, combine all the dressing ingredients. Blend until smooth and creamy. Adjust the consistency with more water if needed. Taste and adjust salt and pepper accordingly.
In a large salad bowl, toss the chopped Romaine lettuce, cherry tomatoes, and croutons.
Pour the Caesar dressing over the salad and toss until the ingredients are well coated.
Sprinkle Vegan Parmesan cheese on top.
