Ingredients:

  • 2 cups cooked black beans, drained and rinsed

  • 1 cup breadcrumbs (ensure they are vegan)

  • 1 cup finely chopped mushrooms

  • 1/2 cup finely diced onions

  • 2 cloves garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 tablespoon soy sauce

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Vegan burger buns

  • Toppings of your choice (lettuce, tomato, onion, vegan mayo, etc.)

Instructions:

  • In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.

  • In a skillet, sauté the chopped mushrooms, onions, and garlic in olive oil over medium heat until softened. Allow them to cool slightly.

  • Add the sautéed vegetables to the mashed black beans. Add breadcrumbs, cumin, paprika, soy sauce, salt, and pepper. Mix everything thoroughly until well combined.

  • Form the mixture into patties of your desired size. If the mixture is too wet, add more breadcrumbs.

  • Heat a skillet or grill over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.

  • Toast the vegan burger buns on the skillet for a minute or until they're warm and slightly crispy.

  • Assemble the burgers by placing the patties on the buns and adding your favorite toppings.

Non-Vegan Alternative:

For a non-vegan version, you can incorporate an egg as a binding agent instead of breadcrumbs. Include one beaten egg in the mixture. Additionally, you can use regular mayo instead of vegan mayo for the sauce.
