Vegan Herb-Roasted Carrots Recipe


Ingredients:
1 lb carrots, peeled and sliced into thin sticks
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the carrot sticks with olive oil, dried thyme, dried rosemary, dried oregano, garlic powder, salt, and pepper until the carrots are evenly coated.
Spread the seasoned carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes or until the carrots are tender and have a slight golden color, tossing halfway through.
Remove from the oven and garnish with fresh parsley before serving.
Non-Vegan Alternative:
For a non-vegan version, you can add 2 tablespoons of melted butter and 1/4 cup of grated Parmesan cheese to the carrot mixture before roasting. Toss the carrots to ensure even coating.
