Vegan Herb-Roasted Carrots Recipe

Ingredients:

  • 1 lb carrots, peeled and sliced into thin sticks

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss the carrot sticks with olive oil, dried thyme, dried rosemary, dried oregano, garlic powder, salt, and pepper until the carrots are evenly coated.

  • Spread the seasoned carrots in a single layer on a baking sheet lined with parchment paper.

  • Roast in the preheated oven for 20-25 minutes or until the carrots are tender and have a slight golden color, tossing halfway through.

  • Remove from the oven and garnish with fresh parsley before serving.

Non-Vegan Alternative:

For a non-vegan version, you can add 2 tablespoons of melted butter and 1/4 cup of grated Parmesan cheese to the carrot mixture before roasting. Toss the carrots to ensure even coating.
