Vegan Kale and Apple Salad Recipe

Ingredients:

For the Salad:

  • 6 cups kale, stems removed and leaves finely chopped

  • 2 apples, thinly sliced

  • 1/2 cup walnuts, chopped

  • 1/4 cup dried cranberries

  • 1/4 cup red onion, thinly sliced

For the Vegan Maple-Dijon Dressing:

  • 3 tablespoons olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon maple syrup

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

For Non-Vegan Option:

  • Crumbled goat cheese

Instructions:

  • In a large bowl, combine chopped kale, sliced apples, chopped walnuts, dried cranberries, and sliced red onion.

  • In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to create the vegan Maple-Dijon dressing.

  • Pour the dressing over the salad and toss gently until well coated.

  • For the non-vegan version, sprinkle crumbled goat cheese on top of the salad.

  • Serve and enjoy your Vegan Kale and Apple Salad!
