Vegan Kale and Apple Salad Recipe


Ingredients:
For the Salad:
6 cups kale, stems removed and leaves finely chopped
2 apples, thinly sliced
1/2 cup walnuts, chopped
1/4 cup dried cranberries
1/4 cup red onion, thinly sliced
For the Vegan Maple-Dijon Dressing:
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste
For Non-Vegan Option:
Crumbled goat cheese
Instructions:
In a large bowl, combine chopped kale, sliced apples, chopped walnuts, dried cranberries, and sliced red onion.
In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to create the vegan Maple-Dijon dressing.
Pour the dressing over the salad and toss gently until well coated.
For the non-vegan version, sprinkle crumbled goat cheese on top of the salad.
