Vegan Lemon Garlic Roasted Asparagus Recipe


Ingredients:
1 lb asparagus, tough ends trimmed
2 tablespoons olive oil
Zest of 1 lemon
Juice of 1 lemon
3 cloves garlic, minced
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the trimmed asparagus with olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper until the asparagus is evenly coated.
Spread the seasoned asparagus on a baking sheet lined with parchment paper.
Roast in the preheated oven for 12-15 minutes or until the asparagus is tender but still crisp.
Remove from the oven and garnish with fresh parsley before serving.
Non-Vegan Alternative:
For a non-vegan version, you can add 2 tablespoons of melted butter and 1/4 cup of grated Parmesan cheese to the asparagus mixture before roasting. Toss the asparagus to ensure even coating.
