Vegan Maple Glazed Roasted Carrots Recipe


Ingredients:
1 lb baby carrots, peeled
2 tablespoons olive oil
3 tablespoons maple syrup
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon ground cumin
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat the oven to 400°F (200°C).
In a bowl, toss baby carrots with olive oil, maple syrup, balsamic vinegar, Dijon mustard, ground cumin, salt, and pepper until the carrots are evenly coated.
Spread the glazed carrots on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes or until the carrots are tender and caramelized, stirring once halfway through.
Remove from the oven and garnish with fresh parsley before serving.
Non-Vegan Alternative:
For a non-vegan version, you can substitute honey for the maple syrup. Use 3 tablespoons of honey instead of maple syrup in the glaze.
