Vegan Mediterranean Chickpea Salad Recipe

Ingredients:

For the Salad:

  • 2 cans (15 oz each) chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 cup red onion, finely chopped

  • 1/2 cup Kalamata olives, sliced

  • 1/2 cup fresh parsley, chopped

  • 1/2 cup fresh mint leaves, chopped

  • 1/2 cup vegan feta cheese, crumbled

For the Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon dried oregano

  • 1 clove garlic, minced

  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, mint leaves, and vegan feta cheese.

  • In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss gently until well coated.

  • Serve and enjoy your Vegan Mediterranean Chickpea Salad!

Non-Vegan Alternative:

For a non-vegan version, you can add grilled chicken to the salad. Simply cook the chicken separately and add it to the salad before tossing with the dressing.
