Vegan Mediterranean Quinoa Stir-Fry Recipe

Ingredients:

  • 1 cup quinoa, rinsed and cooked

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 cup Kalamata olives, sliced

  • 1/2 cup red onion, finely chopped

  • 1/2 cup fresh parsley, chopped

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon dried oregano

  • Salt and black pepper to taste

  • 1 cup firm tofu, cubed (for vegan version)

  • Feta cheese crumbles (for non-vegan version)

Instructions:

  • Prepare Quinoa:

    • Rinse quinoa under cold water. Cook according to package instructions and set aside.

  • Stir-Fry the Tofu (for vegan version):

    • Heat a bit of olive oil in a skillet over medium-high heat.

    • Add cubed tofu and stir-fry until golden brown. Remove tofu from the pan and set aside.

  • Assemble the Stir-Fry:

    • In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion, and fresh parsley.

  • Prepare the Dressing:

    • In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, dried oregano, salt, and black pepper.

  • Combine Tofu or Feta (for vegan or non-vegan version):

    • For the vegan version, add the stir-fried tofu to the bowl with the quinoa and vegetables.

    • For the non-vegan version, crumble feta cheese over the quinoa and vegetables.

  • Pour Dressing and Toss:

    • Pour the dressing over the quinoa mixture.

    • Toss everything together until well combined.

  • Serve:

    • Serve the Mediterranean Quinoa Stir-Fry immediately.

    • Garnish with additional fresh parsley if desired.
