Vegan Mediterranean Quinoa Stir-Fry Recipe


Ingredients:
1 cup quinoa, rinsed and cooked
1 cup cherry tomatoes, halved
1 cucumber, diced
1 cup Kalamata olives, sliced
1/2 cup red onion, finely chopped
1/2 cup fresh parsley, chopped
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried oregano
Salt and black pepper to taste
1 cup firm tofu, cubed (for vegan version)
Feta cheese crumbles (for non-vegan version)
Instructions:
Prepare Quinoa:
Rinse quinoa under cold water. Cook according to package instructions and set aside.
Stir-Fry the Tofu (for vegan version):
Heat a bit of olive oil in a skillet over medium-high heat.
Add cubed tofu and stir-fry until golden brown. Remove tofu from the pan and set aside.
Assemble the Stir-Fry:
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion, and fresh parsley.
Prepare the Dressing:
In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, dried oregano, salt, and black pepper.
Combine Tofu or Feta (for vegan or non-vegan version):
For the vegan version, add the stir-fried tofu to the bowl with the quinoa and vegetables.
For the non-vegan version, crumble feta cheese over the quinoa and vegetables.
Pour Dressing and Toss:
Pour the dressing over the quinoa mixture.
Toss everything together until well combined.
Serve:
Serve the Mediterranean Quinoa Stir-Fry immediately.
Garnish with additional fresh parsley if desired.
