Vegan Oven-Baked Sweet Potato Fries Recipe

Ingredients:

  • 2 large sweet potatoes, peeled and cut into fries

  • 2 tablespoons cornstarch

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions:

  • Preheat the oven to 425°F (220°C).

  • In a large bowl, toss sweet potato matchsticks with cornstarch until evenly coated. This helps to make the fries crispy.

  • Add olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to the bowl. Toss until the sweet potato fries are well-coated with the seasonings.

  • Spread the seasoned sweet potato fries on a baking sheet lined with parchment paper, ensuring they are in a single layer without crowding.

  • Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through, or until they are golden brown and crispy.

  • Remove from the oven and sprinkle with additional salt and pepper if needed. Garnish with fresh parsley before serving.

Non-Vegan Alternative:

For a non-vegan version, you can sprinkle the baked sweet potato fries with 1/4 cup of grated Parmesan cheese immediately after removing them from the oven. Toss to coat evenly.
