Vegan Oven-Baked Sweet Potato Fries Recipe


Ingredients:
2 large sweet potatoes, peeled and cut into fries
2 tablespoons cornstarch
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Preheat the oven to 425°F (220°C).
In a large bowl, toss sweet potato matchsticks with cornstarch until evenly coated. This helps to make the fries crispy.
Add olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to the bowl. Toss until the sweet potato fries are well-coated with the seasonings.
Spread the seasoned sweet potato fries on a baking sheet lined with parchment paper, ensuring they are in a single layer without crowding.
Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through, or until they are golden brown and crispy.
Remove from the oven and sprinkle with additional salt and pepper if needed. Garnish with fresh parsley before serving.
Non-Vegan Alternative:
For a non-vegan version, you can sprinkle the baked sweet potato fries with 1/4 cup of grated Parmesan cheese immediately after removing them from the oven. Toss to coat evenly.
