Vegan Pesto Roasted Broccoli Recipe


Ingredients:
1 lb broccoli florets
2 tablespoons olive oil
3 tablespoons vegan basil pesto
2 cloves garlic, minced
1 tablespoon nutritional yeast
Salt and pepper to taste
Lemon wedges for serving (optional)
Fresh basil leaves for garnish (optional)
Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, toss broccoli florets with olive oil, vegan basil pesto, minced garlic, nutritional yeast, salt, and pepper until the broccoli is evenly coated.
Spread the seasoned broccoli on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes or until the broccoli is tender and the edges are slightly crispy, stirring once halfway through.
Remove from the oven and squeeze fresh lemon juice over the roasted broccoli if desired. Garnish with fresh basil leaves.
Non-Vegan Alternative:
For a non-vegan version, you can add 2 tablespoons of grated Parmesan cheese to the broccoli mixture before roasting. Toss the broccoli to ensure even coating.
