Vegan Pesto Roasted Broccoli Recipe

Ingredients:

  • 1 lb broccoli florets

  • 2 tablespoons olive oil

  • 3 tablespoons vegan basil pesto

  • 2 cloves garlic, minced

  • 1 tablespoon nutritional yeast

  • Salt and pepper to taste

  • Lemon wedges for serving (optional)

  • Fresh basil leaves for garnish (optional)

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss broccoli florets with olive oil, vegan basil pesto, minced garlic, nutritional yeast, salt, and pepper until the broccoli is evenly coated.

  • Spread the seasoned broccoli on a baking sheet lined with parchment paper.

  • Roast in the preheated oven for 20-25 minutes or until the broccoli is tender and the edges are slightly crispy, stirring once halfway through.

  • Remove from the oven and squeeze fresh lemon juice over the roasted broccoli if desired. Garnish with fresh basil leaves.

Non-Vegan Alternative:

For a non-vegan version, you can add 2 tablespoons of grated Parmesan cheese to the broccoli mixture before roasting. Toss the broccoli to ensure even coating.
