Vegan Quinoa and Black Bean Salad Recipe


Ingredients:
For the Salad:
1 cup quinoa, cooked and cooled
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or canned)
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1/2 cup fresh cilantro, chopped
1 avocado, diced
Juice of 2 limes
Salt and pepper to taste
For the Dressing:
1/4 cup olive oil
2 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
Instructions:
In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, cilantro, and diced avocado.
In a small bowl, whisk together olive oil, lime juice, ground cumin, chili powder, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently until well combined.
Adjust salt and pepper to taste.

Non-Vegan Alternative:
