Vegan Quinoa and Black Bean Salad Recipe

Ingredients:

For the Salad:

  • 1 cup quinoa, cooked and cooled

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels (fresh or canned)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red onion, finely chopped

  • 1/2 cup fresh cilantro, chopped

  • 1 avocado, diced

  • Juice of 2 limes

  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons lime juice

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, cilantro, and diced avocado.

  • In a small bowl, whisk together olive oil, lime juice, ground cumin, chili powder, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss gently until well combined.

  • Adjust salt and pepper to taste.

Non-Vegan Alternative:

Follow the same instructions as the Vegan Quinoa and Black Bean Salad recipe, adding grilled chicken for a non-vegan option.
