Ingredients:

  • 1 cup cooked quinoa

  • 2 cups finely chopped mushrooms (any variety)

  • 1/2 cup finely diced onion

  • 2 cloves garlic, minced

  • 1/4 cup chopped fresh parsley

  • 1/2 cup breadcrumbs (ensure they are vegan)

  • 1 tablespoon soy sauce

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Vegan burger buns

  • Toppings of your choice (lettuce, tomato, vegan mayo, etc.)

Instructions:

  • In a large bowl, combine cooked quinoa, chopped mushrooms, diced onion, minced garlic, fresh parsley, breadcrumbs, soy sauce, dried thyme, salt, and pepper. Mix well.

  • Allow the mixture to rest for 10-15 minutes to let the flavors meld and breadcrumbs absorb excess moisture.

  • Form the mixture into patties of your desired size. If the mixture is too wet, add more breadcrumbs.

  • Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.

  • Toast the vegan burger buns on the skillet for a minute or until they're warm and slightly crispy.

  • Assemble the burgers by placing the patties on the buns and adding your favorite toppings.

Non-Vegan Alternative:

For a non-vegan version, you can use regular breadcrumbs instead of vegan ones. Additionally, you can include an egg as a binding agent in the mixture.
