Vegan Quinoa and Mushroom Patties Recipe


Ingredients:
1 cup cooked quinoa
2 cups finely chopped mushrooms (any variety)
1/2 cup finely diced onion
2 cloves garlic, minced
1/4 cup chopped fresh parsley
1/2 cup breadcrumbs (ensure they are vegan)
1 tablespoon soy sauce
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Vegan burger buns
Toppings of your choice (lettuce, tomato, vegan mayo, etc.)
Instructions:
In a large bowl, combine cooked quinoa, chopped mushrooms, diced onion, minced garlic, fresh parsley, breadcrumbs, soy sauce, dried thyme, salt, and pepper. Mix well.
Allow the mixture to rest for 10-15 minutes to let the flavors meld and breadcrumbs absorb excess moisture.
Form the mixture into patties of your desired size. If the mixture is too wet, add more breadcrumbs.
Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.
Toast the vegan burger buns on the skillet for a minute or until they're warm and slightly crispy.
Assemble the burgers by placing the patties on the buns and adding your favorite toppings.
Non-Vegan Alternative:
For a non-vegan version, you can use regular breadcrumbs instead of vegan ones. Additionally, you can include an egg as a binding agent in the mixture.
