Vegan Roasted Garlic Brussels Sprouts


Ingredients:
1 lb Brussels sprouts, trimmed and halved
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon balsamic vinegar
1 teaspoon maple syrup
Salt and pepper to taste
Red pepper flakes (optional, for added spice)
Chopped fresh parsley for garnish
Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, balsamic vinegar, maple syrup, salt, and pepper until the Brussels sprouts are evenly coated.
Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, tossing halfway through, or until the Brussels sprouts are golden brown and crispy on the edges.
Remove from the oven and sprinkle with red pepper flakes if you like some heat. Drizzle with additional balsamic vinegar if desired.
Garnish with chopped fresh parsley before serving.
Non-Vegan Alternative:
If you prefer a non-vegan version, you can add grated Parmesan cheese to the Brussels sprouts during the last 5 minutes of roasting. Use 1/4 to 1/2 cup of Parmesan cheese, depending on your preference.
