Vegan Roasted Garlic Brussels Sprouts

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon maple syrup

  • Salt and pepper to taste

  • Red pepper flakes (optional, for added spice)

  • Chopped fresh parsley for garnish

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, balsamic vinegar, maple syrup, salt, and pepper until the Brussels sprouts are evenly coated.

  • Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper.

  • Roast in the preheated oven for 25-30 minutes, tossing halfway through, or until the Brussels sprouts are golden brown and crispy on the edges.

  • Remove from the oven and sprinkle with red pepper flakes if you like some heat. Drizzle with additional balsamic vinegar if desired.

  • Garnish with chopped fresh parsley before serving.

Non-Vegan Alternative:

If you prefer a non-vegan version, you can add grated Parmesan cheese to the Brussels sprouts during the last 5 minutes of roasting. Use 1/4 to 1/2 cup of Parmesan cheese, depending on your preference.
