Vegan Spinach and Almond Feta Wrap Recipe

Ingredients:

For the Spinach Filling:

  • 2 cups fresh spinach leaves

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

For the Almond Feta:

  • 1 cup blanched almonds, soaked overnight

  • 2 tablespoons nutritional yeast

  • 1 tablespoon lemon juice

  • 1 clove garlic

  • Salt to taste

  • Water (for soaking and blending)

Other Wrap Ingredients:

  • 4 whole wheat or spinach tortillas (ensure they're vegan)

  • 1 cucumber, julienned

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • Fresh basil leaves for garnish

Instructions:

For the Spinach Filling:

  • Sauté Spinach:

    • Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.

    • Add fresh spinach to the pan and sauté until wilted. Season with salt and pepper. Set aside.

For the Almond Feta:

  • Make Almond Feta:

    • In a blender or food processor, combine soaked almonds, nutritional yeast, lemon juice, garlic, and a pinch of salt.

    • Blend until smooth, adding water as needed to achieve a creamy, feta-like consistency.

  • Assemble the Wrap:

    • Spread a generous portion of the almond feta onto each tortilla.

  • Add Spinach and Vegetables:

    • Divide the sautéed spinach evenly among the tortillas.

    • Top with julienned cucumber, cherry tomatoes, and sliced red onion.

  • Garnish:

    • Garnish with fresh basil leaves for added flavor.

  • Wrap It Up:

    • Fold the sides of each tortilla and then roll tightly to form a wrap.

Non-Vegan Alternative:

  • If you prefer a non-vegan version, you can use traditional feta cheese instead of almond feta.
