Vegan Tofu and Vegetable Stir-Fry Recipe


Ingredients:
1 block (about 14 oz) firm tofu, pressed and cubed
2 cups bean sprouts
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small eggplant, diced
3 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
1 tablespoon vegetable oil
Salt and pepper to taste
Cooked rice or noodles for serving
Optional garnishes: chopped green onions, sesame seeds
Instructions:
Prepare the Tofu: Press the tofu between paper towels or using a tofu press to remove excess moisture. Cut the tofu into small cubes.
Stir-Fry the Tofu: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
Prepare the Vegetables: Rinse the bean sprouts under cold water and drain well. Slice the bell peppers thinly and dice the eggplant into bite-sized pieces. Mince the garlic and ginger.
Stir-Fry the Vegetables: In the same skillet, add a little more vegetable oil if needed. Add minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
Add Vegetables: Add the sliced bell peppers and diced eggplant to the skillet. Stir-fry for 4-5 minutes until the vegetables are slightly tender but still crisp.
Incorporate Tofu and Bean Sprouts: Add the cooked tofu back to the skillet along with the bean sprouts. Stir-fry for an additional 2-3 minutes until everything is heated through.
Season the Stir-Fry: Drizzle soy sauce, hoisin sauce, and sesame oil over the tofu and vegetables. Season with salt and pepper to taste. Toss everything together until well coated.
Serve: Remove the skillet from heat. Serve the stir-fry hot over cooked rice or noodles.
Garnish (Optional): Garnish with chopped green onions and sesame seeds for extra flavor and presentation.
Non-Vegan Alternative:
If you prefer a non-vegan option, you can substitute the tofu with cooked chicken breast or shrimp. Simply cook the chicken or shrimp in the skillet until fully cooked before adding the vegetables and proceeding with the recipe as directed.
