Vegan Waldorf Salad Recipe

Ingredients:

For the Salad:

  • 3 cups mixed greens (lettuce, spinach, arugula)

  • 2 apples, diced

  • 1 cup red seedless grapes, halved

  • 1 cup celery, chopped

  • 1 cup walnuts, chopped

  • 1/2 cup dried cranberries

  • 1/2 cup vegan mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 tablespoon maple syrup

  • Salt and pepper to taste

Instructions:

  • In a large salad bowl, combine mixed greens, diced apples, grapes, celery, walnuts, and dried cranberries.

  • In a small bowl, whisk together vegan mayonnaise, Dijon mustard, maple syrup, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss until well coated.

  • Adjust salt and pepper to taste.

  • Serve and enjoy your Vegan Waldorf Salad!

Non-Vegan Alternative:

Follow the same instructions as the Vegan Cobb Salad recipe, replacing vegan ingredients with non-vegan alternatives. Adjust the quantities based on your preferences.

  • 1/2 cup mayonnaise

  • 1 tablespoon honey
