Vegan Watermelon and "Feta" Salad Recipe


Ingredients:
For the Salad:
4 cups watermelon, cubed
1 cucumber, diced
1/2 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
1/4 cup vegan feta-style cheese, crumbled (look for a plant-based alternative)
For the Dressing:
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon agave syrup or maple syrup
Salt and pepper to taste
Instructions:
In a large bowl, combine watermelon cubes, diced cucumber, red onion, and chopped mint leaves.
In a small bowl, whisk together olive oil, balsamic vinegar, agave syrup or maple syrup, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently until well coated.
Sprinkle vegan feta-style cheese on top.

Non-Vegan Alternative:
For a non-vegan version, you can use traditional feta cheese instead of vegan feta-style cheese.
