Vegan Watermelon and "Feta" Salad Recipe

Ingredients:

For the Salad:

  • 4 cups watermelon, cubed

  • 1 cucumber, diced

  • 1/2 cup red onion, thinly sliced

  • 1/4 cup fresh mint leaves, chopped

  • 1/4 cup vegan feta-style cheese, crumbled (look for a plant-based alternative)

For the Dressing:

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon agave syrup or maple syrup

  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine watermelon cubes, diced cucumber, red onion, and chopped mint leaves.

  • In a small bowl, whisk together olive oil, balsamic vinegar, agave syrup or maple syrup, salt, and pepper to create the dressing.

  • Pour the dressing over the salad and toss gently until well coated.

  • Sprinkle vegan feta-style cheese on top.

  • Serve and enjoy your Vegan Watermelon and "Feta" Salad!

Non-Vegan Alternative:

For a non-vegan version, you can use traditional feta cheese instead of vegan feta-style cheese.
