Vegan Zucchini Fritters Recipe


Ingredients:
2 medium-sized zucchinis, grated
1 teaspoon salt
1 flaxseed egg (1 tablespoon ground flaxseed + 3 tablespoons water)
1/2 cup breadcrumbs (ensure they are vegan)
1/4 cup nutritional yeast
2 tablespoons all-purpose flour
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/4 teaspoon black pepper
2-3 tablespoons olive oil for frying
Instructions:
Place the grated zucchini in a colander, sprinkle it with salt, and let it sit for about 10-15 minutes. Squeeze out excess moisture using a clean kitchen towel.
In a small bowl, prepare the flaxseed egg by mixing ground flaxseed with water. Let it sit for 5 minutes to thicken.
In a large mixing bowl, combine the grated zucchini, flaxseed egg, breadcrumbs, nutritional yeast, flour, chopped parsley, minced garlic, and black pepper. Mix until well combined.
Heat olive oil in a skillet over medium heat.
Scoop a heaping tablespoon of the zucchini mixture and shape it into a fritter. Place it in the hot skillet. Repeat, leaving some space between each fritter.
Cook for 3-4 minutes on each side or until golden brown and crispy. Add more oil if needed.
Transfer the cooked fritters to a plate lined with a paper towel to absorb any excess oil.
Serve the vegan zucchini fritters warm, with your favorite dipping sauce.
Non-Vegan Alternative:
If you prefer a non-vegan version, you can use regular eggs instead of the flaxseed egg and traditional breadcrumbs.
